It is ideal for dressing salad and raw vegetables and excellent for bringing out the flavour of grilled vegetables, and combines to perfection with red onions, and also with tomatoes, for making sauces, dips and marinades. It is served as an hors d’oeuvres dressing and sometimes applied in drops to Italian cheeses from the same area, such as Parmesan. Its sweet and sour flavour is wonderful for adding flavour to crustaceans, roast game and liver.
