Our Artisan Deli Co. crispy flatbread is native to the Liguria region of Italy and is known locally as Ciappa (chappa)
Locals named this bakery product ‘ciappa’ as it resembled the shape of the thin and hard stone plates used to build house roofs. Those slates were also used as baking plates to cook ciappe on-the-go whilst travelling.
The origin of this product finds its roots back to the historical period of Saracen when locals used to run and hide away from these privateers for several weeks and found ‘ciappe’ as their favourite food source as they were easy to carry around thanks to its flat shape, lightweight and long storage capacity.
Nowadays the traditional ‘ciappa’ is an artisanal flatbread, lightly salted, produced without the use of moulds, and patterned with small holes on the top surface. A perfect combination with salami, cheese, pate, and tomatoes, but also with sweet spreads like chocolate and marmalades.
Along the classic ‘ciappa’ in recent years there has been different recipe twists thanks to the addition of other flavours directly in the dough, such as olives, garlic and chilli and other Mediterranean herbs
A bread blend made with Olive Oil, rolled and baked with a flat and crispy texture. Use instead of bread, biscuits or crackers to make a light meal – serve with cheese, cold meats or seafood. Can be enjoyed warm to enhance the taste and aroma of hard cheeses.
The dough is portioned into balls and then rolled by a big metal and spiked roller to get the flat stippled effect, which aids adherence of the chosen accompaniment. No moulds are used so the shape is always a bit random and demonstrates the artisan quality of these products, unmistakably Italian bringing the best that the region has to offer, one delicious mouthful after another, and another….completely moreish, these will become your new favourite ‘go to’ fridge moment solution for evening, or anytime hungry pangs when you fancy ‘something different’. Great for lunch boxes to beef up even a humble salad.
Our Black Olive Flatbread option is studded with quality black olives and enriched with olive oil, made in the Ligurian region of northern Italy, by traditional method handed down from generation to generation.
An excellent accompaniment to cheeses or antipasti items such as, salamis, cold meats, tapenades, dips, olives and makes a fantastic accompaniment to wines. Ideal to grace any cheese board at dinner parties as an alternative to regular crackers
